Beyond Idli & Kimchi is a hands-on culinary workshop that explores India’s rich and diverse fermentation traditions, and how they can be thoughtfully integrated into regional dishes.
Participants will learn about indigenous ferments from across India, understand their cultural and biological significance, and experiment with curating dishes around them. The workshop offers a grounded introduction to fermentation as both a culinary practice and a living cultural archive.
This session is led by Scoby Labs — a living, breathing fermentation kitchen lab where cooking meets chemistry, and age-old fermentation wisdom is reimagined through modern biological understanding.
